Description: The Conference Eating Innovation: the art, culture, science and business of entomophagy takes place August 26-28, 2014 at the Montreal Space for Life Insectarium and Botanical Gardens. 

Conference convenors Dr. Elke Grenzer, Director of Culture of Cities Centre, and Dr. Aruna Antonella Handa, Founder of Alimentary Initiatives, invite abstracts for papers on the research, promotion, distribution, culinary preparation, and business of insects as food.

The Future Food Salon Group, in collaboration with the Montréal Space for Life’s Insectarium, is hosting the First International Conference on Entomophagy in North America.

This Conference brings together academics, independent researchers, disseminators, entrepreneurs, investors, artists, chefs, farmers and food producers to collaborate and innovate the market of edible insects. A special emphasis is placed on practices of entomophagy and forms of innovations in research that brings insects to the table at mealtime. This Congress also has an agenda to catalyze innovation in the field of entomophagy: to identify the research gaps, to strategize about funding and financing options, to discuss food grade standards for rearing and processing insects, and to create pathways for dissemination through publications, events and food distribution.
